Peasant fricassee

At the entrance to the Haute Bretagne Botanical Park, Café Casse-Graines offers local, seasonal, and hearty cuisine, available in jars under the brand Les Fricassées Paysannes.
The head chef, a Master Restaurateur, works closely with local producers who share common values: animal welfare, respect for the environment, and short supply chains. He grows vegetables, salads and herbs himself near the restaurant.
Always on the lookout for new ideas, he continues to think about ways to go further in artisanal transformation and wishes to support other small producers in this approach.
