Description
Sicilian antipasti, Caponata is a salad of confit summer vegetables with olive oil, but also with capers, black olives and a hint of vinegar. As soon as you open the jar, the very fruity aroma of this excellent Italian olive oil transports you far away to the sunny south. It is a tangy salad that can be eaten cold, or warm simply on toast (but can also accompany cold meats, steamed fish, or eggs).
