Description
Pommé is a traditional preparation made from slowly reduced apple juice with cider and sometimes spices. It offers a rich and complex flavour, blending caramelised, honeyed and slightly tart notes, with a smooth texture reminiscent of a spread. On the palate, it reveals a natural sweetness, balanced by a subtle tannic and tart hint, typical of old cider apples. Although prepared exclusively with apples, pommé sometimes has a caramel taste with a faint prune aroma. A speciality unique to the Gallo region that almost disappeared, this spread is also found on the Anglo-Norman island of Jersey, called black butter. This rustic and delicious gem is perfect for lovers of deep, natural flavours.
